This Junmai Daiginjo ‘Parfait’ was launched on the 20th anniversary of Shichida brand in 2020. Parfait means perfect in French.
100% Yamadanishiki special A grade rice is used with 25% rice polishing ratio to create significantly soft and silky mouthfeel and elegant style of sake. It is matured at minus 5 degree for 6 months to integrate all elements to settle.
Tasting Notes: Beautifully floral with melon and lychee notes on the bouquet, medium bodied with a silky mouthfeel showing fresh tropical fruit notes.
Food Pairing: white fish dishes, and lobster.
