Takara's Shochikubai Shirakabegura Mio is made from only rice, koji and water, brewed in Nada, Hyogo. The character mio evokes the delicate foam trailing behind a ship, and the sake lives up to it: light, refreshing, fruity and balanced by crisp acidity. It represents a genuinely new wave of Japanese sake.
Lively aromas of grape and ripe pear rise out of the gentle effervescence. The palate is subtly sweet with refreshing acidity, closing clean with a slight pucker that recalls sparkling white wine. It is soft at 5% ABV with an SMV of minus 70, so it drinks easily even for people who think they do not like sake.
Takara recommends serving it chilled to around 10 degrees in a wine glass, or warmed to 40 degrees, which adds body and expands the aroma. It is an excellent match with lightly seasoned dishes and sashimi, and a natural aperitif.
