Gekkeikan brews in Kyoto, and this sophisticated tokubetsu junmai is crafted exclusively using Yamada-nishiki rice, coveted for its rich flavours and aromas. Yamada-nishiki is widely regarded as the best of the sake rice varieties, and the result here is elegantly aromatic, inviting and sophisticated.
The aromas are gentle and elegant, featuring rice flour, fruity apple, melon and banana, with hints of sweet cotton candy and honey. It is medium dry, with a sake meter value of +4.5, acidity of 1.5, and 14% to 15% alcohol.
It is best served with yakitori, curry and any other dishes with bold flavours, where its clean structure keeps up instead of disappearing.
