Dassai is brewed in Yamaguchi Prefecture and has become one of the most recognised names in premium sake. The 45 refers to the rice polishing ratio: each grain is milled down to 45% of its original size before brewing, removing the outer layers that carry rougher flavours.
The result is generous. It gives a flavourful mouthfeel and a smooth texture, along with a refreshing finish that leaves you wanting more. The rice variety is Yamadanishiki, the grain most prized for sake brewing, at 16% alcohol, with a sake meter value of +3 and acidity of 1.5.
This is the 1800ml format, the traditional isshobin, which suits a long dinner, a restaurant list, or a household that drinks sake regularly rather than occasionally. Serve it chilled in a wine glass alongside sashimi, grilled fish or lightly dressed vegetables. Stocks are limited.
