Although this sake is in the junmai category, the brewers go through great lengths to prepare this sake in a similar manner to many daiginjo. Using Gohyakumangoku rice from Tottori Prefecture, Chiyomusubi “Tokubetsu Junmai” has long been a local favorite. Now it’s your turn to dive into this intriguing brew. With its notes of cotton candy and even black pepper, this one is a bit undefinable, but definitely interesting.
