Don Nuño is the dry Oloroso in Lustau's Solera Familiar range, made from Palomino and aged oxidatively for twelve years at Bodega La Campana in Jerez de la Frontera. Oloroso is fortified above the level at which flor yeast can survive, so the wine matures in contact with air and builds colour, nuttiness and weight rather than the saline lift of a fino.
The colour is dark bronze with a golden rim. The nose is pungently nutty over a smoky wood background, and the palate is rich with bitter chocolate, walnuts and baked chestnuts. It is dry, and it finishes long at 20% ABV.
Lustau suggests serving it at 13 to 14 degrees with matured cheeses, red meats or grilled red tuna, and it is ideal with game, stews and other rich meat dishes. The 375ml half bottle is the sensible size for a wine you pour in small glasses.
