This sweet potato shochu is a real treat. It took DEN-EN Shuzo eighteen years to find the right recipe for a barrel aged sweet potato shochu, and the result is something to be proud of.
Envelhecida is produced with white koji, then matured for three years in toasted oak casks in which whisky was previously stored. The ageing gives it a golden colour and a smooth, fruity taste. Fine whisky notes and the special character of sweet potato combine into a taste experience that is genuinely hard to find elsewhere. At 25% alcohol it is light and round, and also very aromatic.
Because of that lightness it can be enjoyed very well with food. It goes well with nuts, cheese, smoked fish, dried fruit and roasted meat. Drink it straight, on the rocks, or as a highball with soda, which is the easiest way in if shochu is new to you.
