Den-En Kuro is a sweet potato shochu distilled from brewed local Kogane Sengan sweet potato with Kuro, or black, rice koji, which is what gives a rich Satsuma shochu its signature aroma. The distillery uses low temperature fermentation and, in a detail it is happy to share, plays classical music through the production process.
It is made from yellow sweet potato, rice and black koji yeast, and bottled at 25% ABV. Expect earthy sweetness and depth rather than the lighter, cleaner profile of a rice shochu.
Japan drinks imo shochu at the table, not after it. The distillery suggests fish or chicken teriyaki, nikujaga meat and potato stew, and motsu nabe hotpot. Drink it straight, on the rocks, or cut with cold water in summer and hot water in cooler months, which opens the aroma considerably. The 900ml bottle is the everyday format.
