Winemakers Notes: The Yarden Chardonnay shows off aromatic lemon, pear and pineapple fruit notes, layered with nuances of flowers, mineral and French oak. This balanced full-bodied wine exhibits nice acidity and a lingering finish. While ready to drink now, the wine will continue to develop for a number of years in the bottle, and should stay in great drinking condition for five to seven years from harvest. Yarden Chardonnay goes wonderfully with roasted chicken with hazelnuts, pan-seared halibut fillets, smoked salmon mousse canapés, or fettuccine with wild-mushroom sauce.

 

The Appellation: The Galilee (or Galil) is the most northern, and generally considered the best, appellation in Israel. The highest quality area within the appellation is the Golan Heights (or simply the Golan), the coldest region in Israel. The vineyards on this volcanic plateau rise from 400 meters (1,300 feet) above sea level to 1,200 meters (3,900 feet) and receive snowfall in the winter. Golan Heights Winery is located in the town of Katzrin in the central Golan.
